Why we have a largely Mediterranean influence with recipes on Umami.

The Mediterranean diet has gained widespread recognition as a nutritional paradigm associated with numerous health benefits for good reason. Countless scientific journals have researched the Mediterranean Diet and found similar results in cardiovascular health, metabolic health and longevity.
The hallmarks of a Mediterranean dish include a source of:
healthy fats from olives, extra virgin olive oil, nuts, and fresh fish.
an abundance of fresh fruits and vegetables, eaten in season and as the ‘hero’ of the dish (think about eggplant parmigiana; the breadcrumbs are not the hero here - it's all about the eggplant and tomato sauce).
whole grains, and not just one variety of whole wheat - rye, barley, couscous, spelt, and buckwheat are used, as well as freshly baked bread.
lean protein either from plant sources (legumes) or fish - there is not a lot of red meat consumption.
There is some research to support a modified Mediterranean Diet, which looks at mental health outcomes like depression and anxiety, and the research there suggests a slight increase in red meat intake is favourable for mental health. This may be to do with increase in protein, bioavailable iron and other minerals available in high amounts in red meat.
One element of the Mediterranean lifestyle that is non food related, but has a significant impact on the results of a Mediterranean diet is the social relationships and community. Food is enjoyed together, it brings families and neighbours together - cooking a meal isn’t always just about fuelling your body - it’s about feeling joy.
Having spent a significant part of my adult life living and travelling in regions of Europe where the Mediterranean Diet originates, I have noticed that people love to cook, they love food, they have a healthy relationship with food and sharing food with loved ones is a true joy.
